This classic filleting knife has an extra thin, 16cm flexible blade designed for easy filleting of delicate fish as well as preparing ultra thin slices for carpaccio.

Each Wüstof Classic knife is forged from one piece of specially tempered high carbon steel to ensure outstanding strength and can be identified by their full steel bolster and triple riveted handles which are adorned with a red Wusthof Trident Symbol.
