Grapes are still foot-trodden, and fermentation is halted midway with the addition of a neutral brandy spirit, preserving its natural sweetness and creating a robust 20% ABV. The wine is then aged in the coastal town of Vila Nova de Gaia, where cooler conditions allow it to develop its signature depth and flavour.
